today madeline and i made martha's snickerdoodle cupcakes with the 7 minute frosting.
the cupcakes turned out beautiful, seriously, they were super easy to make and the batter was yummy too. i did however use all purpose flour instead of cake flour and they still turned out great, the batter was super easy to make, i had everything in my cupboards, so i know will be making these again as a last minute!
now the frosting on the other hand was a bit difficult, the 7 minute frosting is a sort of meringue frosting, so i had a little trouble with it, i definitely know that next time around i will make it while both kids are sleeping, because it does take time whisking egg whites, and boiling sugar/corn syrup and water to 230 degree, needless to say it took me a little longer than 7 minutes.
madeline and i just had a cupcake and they are delicious, they definitely taste like snickerdoodles, so i am sure that all of madeline's friends tonight at church will surely enjoy!

is this cookbook only with cupcakes??? i bought a cute cupcake book the other day.... i registered for a candy thermometer too... because the boiling the sugar and water to a temp is so technique sensitive... cute pics of lil maddie
